TAGINE OF MEAT WITH WILD ARTICHOKES



FOR 6 PERSONS

INGREDIENTS

2 onions, chopped

750g meat

½ glass Oliver oil &1/2 glass vegetable oil

2 garlic cloves, crushed

Salt

1 teaspoon ginger

1teaspoon pepper

Some saffron

Pastille saffron

1l/2 of water

2kg wild artichokes

1 /2 preserved lemon

1tablespoon chopped coriander

1kg & half meat



METHOD



Brown over low heat chopped onions and meat with oil, stir .when onion sweat add garlic, Salt, ginger, pepper and saffron. Once ingredients incorporated, pour water and cook for 50 minutes

Thin out leaves of artichokes, take off the chokes and keep the hearts in water with lemon juice added

Ten minutes before end of cooking, add hearts of artichokes coriander and one tablespoon lemon juice. Simmer while watching the cooking of meat.



Serve hot as main dish with salad
