Tajine with chicken, olives and lemon.


Today we made a tajine with chicken, olives and lemon. We bought chickens, lemons, olives, red onions, garlic, and ginger at the market. We cleaned the chickens, covered them in salt, and let them soak for two hours in water and lemon. Meanwhile, we sliced the onions, minced the garlic and juiced the lemons. When the chicken had soaked for two hours, we put the chicken, olive oil, vegetable oil, salted butter, ginger, and minced garlic in a pressure cooker and cooked it for half an hour. After cooking it half an hour, we opened up the lid and removed the chicken. We then added the onions and cooked them with the lid off until they dissolved into the sauce (removing the lid allows the sauce to thicken). Once the onions cooked all of the way, we put the chicken back in the pot.
