Today i make a recipe for couscous with seven vegetables.
We need for ingredients :
2 kg meat, lamb,beef or chiken.
2kg onion
1/4 chikpeas, soaked overnight.
1 glass olive oil
3 tomato blanched and cut
2 tablespoon salt
1 tablespoon pepper
1 teaspoon ginger
1/4 teaspoon saffron
a few saffron pistils
a few cinnamon
water ( about 3 litres)
1kg carrots peeled and sliced lengh ways
1/2 kg turnips peeled and cut in half lengh ways
1/2 kg courgettes cut in half and spilit lengh ways
1 kg cabbage cut two quarters
1kg red pumpkin cut in pieces
1 sprig coriander chopped.
Couscous
1/5 semoulina couscous
6 tablespoon vegetable oil
2 tablespoon salt water, 2 tablespoon butter or rancid butter ( smen)
Metho
*Wash and drain rapidly the couscous grain spread it out on a large dish by hand, to separate each grain .
*In a couscous saucepan and over moderate heat fry gently .
* Diced mest with oil chopped onion, chickpeas and all spices.
Cook together in the bottom of the steamer, over medium heat for 40 min.
Mean while put semolina couscous into a large plate ( kessaa) spray 6 tablespoon oil and work between palms, dilute salt and a big glass of water moisten semolina then continue work, leave it 25 min and transfer semolina into the couscous steamer with you put over couscous saucepan when steam rises over semolina, remove the steamer and cover saucepan turn the couscous on to the large plate, spay a big glass of water and separate grains with your fingers then let it rest 15 min.
During this time add in the saucepan carrot,turnips,brunch of coriander and cayenne paprika.
Cook for second time semolina in the steamer for 30 min .
Semolina should be cooked over 3 times before the last cooking make a butter or rancid butter and work.
Before frist stap put a red pumpkin ;courgettes and cabbage cook for 15min
(the last vegetables cook quickly)
When these vegetables are cooked, remove them from the heat the juice should be fairly plentiful arrange your couscous in the traditional manner and serve it hot.

Le vendredi à Fès
· Le matin les hommes partent au hammam avec leurs enfants après ils s’habillent de leur blanche djellaba et leur jaune babouche avec un rouge tarbouche (chapeau). Par contre les femmes préparent un bon petit déjeuner pour la famille dont on trouve le thé fassis avec le baghrir (crêpe) harcha, pain au blé fait à la maison, beurre de chèvre, miel, l’huile d’olive……
· Après le petit-déj c’est le moment de la prière, alors les hommes partent à la mosquée, et les femmes ont deux missions :
- commencer à préparer le fameux couscous avec les sept légumes et la confiture d’oignon et de raisin sec.
- parfumer la maison avec l’eau de fleur d’oranger et de rose, de l’ansons (l’oûud).
Après la fin de la prière toute la famille se rassemble dans la maison des grands parents pour le déjeuner, et pour un plateau (seniya) de thé bien parfumé avec de la menthe, et de l’absent, et de pétale de fleur d’oranger accompagné des délicieux gâteaux : corne de gazelle, fekkas, ghriyba.
Pour la médina toute est fermé dans ce jour tout le monde profite de sa façon.
Malheureusement ses traditions on les trouve que dans les anciennes villes du Maroc comme : Fès, Marrakech, Meknès, Tanger.
Alors ne créner rien on n’a pas oublié la recette du jour : qui va être le couscous avec les sept légumes et la confiture de raisin sec et la viande d’agneau on va la publier demain.
Je vous laisse ma famille m’attend pour le couscous humm….. J’ai hâte d’arriver à la table.

Hello, everybody
Today it’ is not shinny day, spring is coming and we wish by then that the good weather will be back,
I make in dinner at Riad laaroussa some salads, and lamb Tajine with vegetables of the season (green peas, artichokes) in desert a pears pie.
We give the recipe of the famous and delicious salad in fez: green and red pepper with garlic and preserved lemon,
½ kg red pepper
½ kg green pepper
6 tablespoons fool olive oil,
4 garlic cloves
½ teaspoon cumin
Salt
Chilly according to your taste,
Parsley chopped
Half preserved lemon
For the decoration put the chopped parsley, serve hot or cold as you wish,

La Harira Fassia

Alors suite à la demande d'un client du Riad Mr Francis on va faire la harira fassia
Ingrédient :
1/4 de pois chiches trempé dans l'eau,
200g de viande coupé en dès,
1 grosse oignions hachez,
1 verre de riz,
1/2 kg de carotte,
1/2 kg de pomme de terre,
1,5 kg de tomates
500 g de concentré de tomate,
1 bouquet de céleri (krafess),
1 bouquet de coriandre et de persil plat hachez,
1 c à c de poivre noir,
1 c à c de safran,
1/2 c à c de gingembre,
1/2 de cannelle
Sel
2 litres d'eau,
1 c à c de beurre ou beurre rance (smen)
La Préparation
Dans une cocotte minute mettez les pois chiche la viande, l'oignon, le persil, le céleri hachez finement, les épices, le beurre rance,les carottes, les pommes de terre entier et les deux litres d'eau, laissez la marmite sur le feu jusqu'a cuisson du pois chiche, enlevez les pommes de terre et les carottes et mixez les avec les tomates, après ajouter cette sauce avec les autres ingrédients, mouillez la marmite avec un litre et demi d'eau chaud, après ébullition rajoutez le concentré de tomate et le riz en remuant pendant 10 min, laissez la harira cuire à feu doux en remuant sans arrêt jusqu'à l'obtention d'une soupe onctueuse et légère.
5min avant d'ôter la harira du feu parsemez la de coriandre et de céleri,
NB : la harira doit être servi chaud accompagner des dates, des gâteaux aux miel (chbakia, briwate aux amande).

Famous soup in Morocco
1/4 chik-peas sooked overnight.
200g meat, beef or lamb any cut ( in pieces).
1 big onion finely chopped.
1 tsp pepper.
1 tsp saffron.
1/2 tsp ground ginger.
1/2 tsp cinnamon.
2 tablspoonful salt.
1,5 kg tomato.
50g tomato puree.
1teaspoon butter or rancid butter.
1/2 kg carrots.
1/2 kg potatoes.
1 bowl sticks of celery parsley and coriander chopped.
1 cup of rice.2l of watter.
Method
put in pressure cooker chick peas diced meat, onion, celery, parseley,ginger,saffron,pepper,butter,salt,cinnamon, carrot, potatoes, 2 litres water, cook for 45 min.
After you open your pressure cooker you take the carrot and potatoes, you mix them and you put in a gallon pan with mixed tomatoes 1 cup of rice ,50 g tomatoes puree, parsley and coriander
chopped.
when they are all cooked stir continuously leave to cook for a few minutes more in the uncovered pan, stiring from time to time for 15 minutes.
the harira should be served hot accompanied by dates or honey cakes ( chabakia or briwattes with almond).

One day in riad Laaroussa

I'm very happy to Wright for you another time in our bloq,and give you some delicious receipts of the Moroccan kitchen ,this day is exceptional because the riad is fool, and we celebrate a party of Gnawa for our guests and we make a surprise for 7 women's whose celebrate her 60 birthdays.
In this morning I was going with her to the market for shopping, they choice salad broad beans, read and green pepper courgette with tomatoes.
In tagine we will prepare kebabs with chicken and chopped meat ( kefta).
In desert, milk pastilla with almond.
Ingredients:
1 kg chicken kebabs.
1 tablespoon full salt.
1 teaspoonful black pepper.
1 big chopped onion.
1 chopped parsley.
Oliver oil.
Method
Clean wash and bone a chicken then cut the meat into 1 inch cubes a mix with all ingredients leave to marinade in a cool place for 3 hours then threat on skewers, 6 pieces to each and grill over very hot charcoal.
You have a choice if you like to eat it with rice or steamed vegetables.

Fève mariner à la marocaine.
C'est comme tous les jours de cette semaine il fait beau.
Aujourd'hui on va faire des salades marocaines avec un Tajine de poulet à la pomme de terre et à l'olive rouge, et au dessert une salade de fruit de la saison(fraise, banane, pomme, avocat, orange, l'eau de fleur d'oranger).
Je vous donne la recette d'une salade marocaine très délicieuse avec des légumes de la saison.
Il faut l'essayer pour le savoir c'est des fève mariner:
Ingrédient:
-1 kg de fève vert fraîche,
-1gousse d'ail
-1/2 verre de l'huile d'olive.
-Sel, l'écorce d'un citron confit.
-100g d'olive rouge.
-Piment fort selon le goût.
-1verre d'eau.
Préparation :
Écossez les fèves puis laver les, mettez dans une marmite salez puis ajoutez l'ail haché finement, et l'huile d'olive, un verre d'eau chaud, fermez tout ça dans une cocotte minute pour 10min. Après l'ouverture de la marmite ajouter du coriandre haché, des morceaux du citron, et laissez sur un feu doux pour 5 mins.
Servez les fèves décorées avec du citron confit et des olives rouges.

Happy Christmas
We are very glad to write another time to you on our blog .
We wish that you spend a good Christmas.
At riad Laaroussa, we celebrated the chistmas night with our guests, they were very happy with Moroccan folklore and we prepared a delicious dinner with mechoui , differents salads and desserts.
We had a very good atmosphere in the kitchen and santa klauss was with us and brought us many gifts.
Fez is full of tourists at the moment.All our guests enjoy the medina and the neighboroughs.

Today, we give you the recipe of Mhalabia as a request of our dearest visitors .
Ingredients :
1/2 l milk.
1/2 l orange juis.
4 soup spoon of sugar.
4 spoon of Maizena.
1/2 cup of orange flower.
put milk in the pan, 2 soup spoon of sugar, 2 soup spoon of Maïzena, , 2 soup spoon of orange flower while the ingredients on the fire don't stop stirring till it looks like a yoghurt . For the orange juice we follow the same steps (2 soup spoon of sugar, 2 soup spoon of Maïzena, , 2 soup spoon of orange flower while the ingredients on the fire don't stop stirring till it looks like a yoghurt ). After we put milk in the bolls to be useful by adding the orange juice in the center. Let in cool weather half an hour before serving it with a sheet of mint or broken almonds.
Try preparing and pouring milk and orange juice in the same time in bolls.

Almond juice
Today is the forth day of Ramadan there is an environment especially for this month in all the médina of Fès.
Yesterday , Samira left with customers to the market, there were many people, the customers noticed there were various kinds of Marocains cakes to honey (chebbakia briwattes)
for this occasion we will make you a receipt juice almond with milk we take it at the beginning of the ftour.
Ingredients:
1/2 glass d' almonds chopped.
1/4 d' water of flower d' orange tree.
100 G of sugar. 1 milk L.
We mix all the ingredient in a mixer, and we serve it cold
